Chocolate Ice Cube Candies

In terms of blog neglect, I am a very guilty party. With our wedding coming  up and trying to figure out how to do yard work on a huge and beautiful lawn once tended by experienced farmers ( who were also retired) My hands have been in the dirt a lot more than the flour. But I have missed you all dearly, so it's time to get the summer recipes a-flowing. Since I have about 7 tons of rhubarb, I'm on the look out for new recipes, as well as recipients of rhubarb. I have a depression area tendency to hate having any single ounce of food wasted, and unless we eat it non-stop, a lot will go to waste, so if you're in the Twin Ports area hit me up!
    Living in the country is amazing, but if the urge to bake something strikes and you haven't got an ingredient, it's not like when I lived two blocks from the grocery store. Luckily I have a lot of substitution ideas, and sometimes you strike gold, like with this healthy and delicious rendition of an absolute favorite candy of mine from childhood. It was called "Ice Cube" chocolate, and it was usually 25 cents right up by the register at Ben Franklin. It's claim to fame was the fact that it melted in your mouth like an ice cube, except with chocolate-y deliciousness instead of freezer burn. So this recipe came from an intense chocolate craving, a desire to wear a wedding dress and only having a few random ingredients on hand. 


Chocolate Ice Cube Candies

-1/2 cup dark chocolate chips
-2 T. peanut butter
- 2 t. coconut oil
Directions: Combine all ingredients in a ramekin and microwave until smooth, whisking to combine. Place in the freezer for an hour then serve cold.
 Makes one serving



By some miracle of fate, this tasted exactly like the world's most perfect candy that I haven't been able to find since I was a kid. Creamy and decadent, these melt in your mouth and have a highly chocolate craving satisfying flavor.




Hot diggity, this is so good!!! And this recipe makes just enough for one or two sweet servings.

 It's become a staple treat around our house. It also helps that it's a good source of energy and pretty healthy, because chocolate is good for you in small quantities, right??
