Tomato Basil Parmesan Pasta

Today was what every pasty girl in the Northwoods dreams of while watching the snow fly for 6 months straight; A day un-adulterated by poor weather. Nothing but brilliant blue skies speckled with fluffy clouds, a slight breeze, and all day free to garden. I have been so busy the last few months, it was great to have a day with gorgeous weather to spend in my gardens, preparing them for a glorious summer. It did occur to me that I've truly settled into country life, as I was only slightly ashamed when a car did drive by and see me in my Boonie Hat and polka dot bikini,  slaying weeds like a boss. I was covered from head to toe in a thick layer of mud by the time the 6 hours were done outside, and everything is coming together amazingly. 

It's picnic/BBQ/ patio season, and I love making stuff that is summery and easy. Today I planted some oregano, parsley and basil that I started from transplants a few months ago, and I had to steal some basil for this recipe. I love everything about basil. The lovely shade of green, the fragrant smell, the taste, and even the word basil, it is just plain appealing. 

Tomato Basil Parmesan Pasta


-1 pound cooked Penne Pasta, al dente
-1 1.2 T. extra virgin olive oil
-1/4 cup  finely chopped basil
-1 cup tomato, chopped
-1/2 cup parmesan
-1 t. salt
-1/2 t. pepper
-1 t. lemon juice and zest
Directions: Combine all ingredients and toss gently to combine. Serve chilled.

*4 main dishes or 6 side dishes.


Fresh and crisp basil and tomatoes make for a  bright and oh so simple, this makes a great side dish for any summer meal. It's also a great way to use up all the basil you're growing.

I am looking forward to a summer chock full of dishes from my garden. Nothing is more satisfying than cooking with your own harvest. I hope you're all off to a great start to summer too, especially in my neck of the woods, we relish every single nice day to the fullest. Enjoy!
