Double Chocolate Almond Bread

It came to my attention that it had been a while since I shared an actual baked good on my blog, and since this was born out of baked sweetness, it was high time I made something new.  I was craving chocolate a few days ago, and I mean, REALLY craving chocolate. I am also really craving looking good in my wedding dress in a few months, which requires some restraint in the dessert department, so anything really indulgent is made in super small quantities or quickly whisked off to work where my fellow co-worker's can swipe them up for a mid-day treat.  This meant I had to keep my wits about me (and my spoon out of the Nutella ) and make something healthy and chocolate-y.

 I chose to make a chocolate quick bread, one that I made a few times before but decided it didn't have enough chocolate kick for what I was after. 

Double Chocolate Almond Bread

-2 cups whole wheat all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-1 cup chocolate chips
-1 large egg
-1 cup sugar
-1/2 cup slivered almonds
-1/2 cup cocoa powder
-1 cup Almond milk
-1/3 cup canola oil
-1 t vanilla 

Directions: Preheat oven to 350 degrees.  In a large bowl combine flour, baking soda, salt, until combined. In a medium bowl, whisk the egg  sugar and cocoa together until combined.  Whisk in the Almond milk, oil, and vanilla. Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Fold in chocolate chips and almonds. Spray 2 9x5 loaf pans and pour batter in. Sprinkle almonds on top and bake 45 minutes, or until toothpick inserted in top comes out clean.


 This bread has great flavor that suits your sweet tooth and is pretty darn good for you too.
