Baking in my grandparents house is always a nostalgic venture. It's there that I felt the comfort coming inside from a bitingly cold Ely day playing in the snow with my sister and the neighborhood kids to the warm smell of cooking onions, garlic. I ate endless "dippy eggs" ( poached eggs), Potica, Pasty and my grandpa's nasty diabetic cookies my grandma always made. I think they tasted good because they were off limits...
It had been a while since I'd made scones, mostly due to trauma from having made so many over the years and the fact I don't really like them.... But I recognize their place in many a person's heart, so I made some for dear old gram.
Cranberry White Chocolate Scones
-3 cups flour
-1 cup cane sugar
-1 1/2 T. baking powder
-1 t. salt
- 1 stick butter
-1-1 1/2 cups buttermilk
- 1 t. cinnamon
-1/2 t. nutmeg
-1/2 cup white chocolate chips
-2/3 cup dried or fresh cranberries
-2 eggs
Directions: Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray. Combine dry ingredients, including sugar and mix well. Using microplane or cheese grader, grate butter into dry ingredients, then add beaten eggs and buttermilk slowly until dough is just formed. Fold in cranberries and white chocolate chips and mold into a circle. Cut into 8 pieces and sprinkle top with sugar. Bake 25-30 minutes, until toothpick inserted inside comes out clean.
I was quite pleased I hadn't lost my touch with scones, as they can be a bit of a beeotch to get to turn out, especially when you're a touch rusty. I only had 2 flashbacks of spinach feta scones chasing me around in a chef's coat with pitchforks fashioned out of rosemary sprigs......
OK, so I cut these into 6. Cut them however you want, depending on the size. Scones are always a good treat if you have people over for coffee or tea. Creamy sweet white chocolate mixed with tart cranberries makes for a match made in heaven. I know my grandma approved! Enjoy!
