zzzzzzzzzzzzz......That's been the perpetual desire for me the past few weeks, rest. I was so tired last week when I was getting off my 3rd 13 hour day in a row I actually felt drunk. It wasn't a particularly pleasant feeling, like a relaxing night with a book and wine, or a girl's night out with martini's kind of fuzzy feeling, but an icky, tired, headache kind of buzz.....Until I've finished my internship though, this is how it's going to be, coffee, back pain, and the fading of some of the hard-won muscles I forged in the last few months of working my butt off at the gym... Sigh....
I could go the route of bitterness. Cursing myself for being so artsy- fartsy throughout my entire life and never finding gainful employment that allows me to pull myself out of poverty by now so I didn't have to work so hard now to start a career in a different field. But hey, I am who I am. I know I need to eat well to sustain life when my schedule is so overwhelming, and I need my brain to work under all the pressure and stress and physical crap I'm putting my poor body through right now,so I made a salad that always seems to put the spring back in my step when the going get's tough.
Smoked Salmon and Avocado Salad
-2 cups spring mix greens
- 4 oz. smoked salmon
-1/2 ripe avocado, sliced into chunks
-1 hard-boiled egg, peeled and diced
-3 black olives
-2 onion slices
-1 small tomato, sliced
-1/4 cup red or green pepper, sliced
-sprinkling of parmesan cheese
-croutons if desired
Dressing: -1/2 T. Olive Oil
-1/2 T. Flax oil ( if desired)
-1/2 t. red wine vinegar
-1 pinch salt and pepper
Combine all ingredients in a bowl, mix olive oil, flax oil, red wine vinegar and salt and pepper, drizzle over salad. Devour.
Just looking at this colorful salad is rejuvenating. Protein from the eggs and salmon, Omegas, and veggies galore.
It's tempting to want to eat easy crap food when you're busy, but I always feel so much better if I have a good healthy meal to keep my aching brain going. And it's awfully pretty too, and every person in the break room at work will want to steal a bite, so get your fork ready to fend them off.
