That is a word I just invented to describe the last week of my life. When it's put in the dictionary, the description will read; "Whirlfrickin'wind: verb; "To simultaneously have seven-hundred things happen in the span of a day and you're so overwhelmed you can't do anything but giggle in response to people when they talk to you." I've been busy, to say the least, and undoubtedly convincing people I am going stark-raving mad in the process, as I've got little to give by means of communication with all this stuff going on. All this bru-ha-ha is good though, things are coming to a crescendo, and soon I will be graduating. In three weeks, I will have that celebration martini I've been dreaming about for the past 2 and a half years, and a new profession I adore oh-so much. So yeah, life is stellar. And as most artsy-fartsies such as myself, I find my art of choice cathartic during overwhelming times, and I decided to get on my baking cap and invent a new dessert to take my mind off interviews, final projects, and the prospect of buying a house and adopting a pooch. I tweaked a recipe I have for vegan Crunchy Chocolate bars and made them with beautiful Nutella. Not to toot my own horn, but the results were pretty darned amazing. Nutella does makes everything taste magical though....
Crunchy Nutella Chocolate Bars
-1 box Crispy Brown Rice Cereal ( I use Ewehorn brand)
-1 cup dark chocolate, melted
-1 cup Nutella
-1 cup brown rice syrup
-3/4 stick of butter
-2 T. cocoa powder
Directions: Spray a 9x13 inch pan with non-stick spray. Combine brown rice syrup,chocolate, cocoa, butter and Nutella in a saucepan on low heat,stir util combined. Add cereal to a large bowl and pour melted ingredients over. Stir until combined. Press in pan, chill 1 hour or until set. Store at room temp up to 1 week, can be frozen to last longer.
These are chewy, crunchy, chocolate-y, and have the delicious hazelnut flavor of the Nutella. Amen.
This is a win-win situation for my sweet tooth, and for the people at work who will get to eat them tomorrow.
Boyfriend no swiping! Before this bodacious bar was done with it's photo-op, the man swept in to claim a bite.... At least it was a photogenic bite mark that really shows the chewy beauty of these treats.
