Zucchini and Kale Saute'

After viewing this upcoming weeks forecast, it was apparently high time to wrangle what was left in our garden and start getting it ready to till it up for next year. It seems like just yesterday we were sweating our tails off  Memorial day weekend, lovingly tucking seeds into newly un-thawed soil. Now what feels like a week later there's a nip in the air and red patches forming on the trees. We had a pretty good year for our first harvest, and learned A LOT about what to do and not do next year. Needless to say, I now have something to dream about on cold winter nights in terms of the placement of next years pumpkins and sunflowers.

The best ways to learn in my experience is:
 A. Ask someone who knows what the hell they're talking about.
B. Trial and error.

 We did a lot of both this first year, and next years adventures in gardening will be a dirt covered blast all over again.  There was a lot of kale and zucchini to use up from this last harvest, so it was only right to combine them in a delicious saute'.

Zucchini and Kale Saute'

-1 medium zucchini, chopped
-1 medium yellow onion, diced
-2 cups chopped and stemmed kale
-pinch salt
-1/4 t. garlic powder
-pinch pepper
-1-2 t. red pepper flakes (depending on the kick you want)
-1 T. olive oil
Directions: Heat oil over medium heat until warm. Add onion and zucchini and saute' 7-9 minutes until softened. Add salt,pepper, garlic powder and red pepper flakes, then add kale and saute' another 2-3 minutes until slightly wilted. Serve warm.


A lovely green side dish that's brimming with healthy, crunchy veggies.



Add as much red pepper flakes as your heart desires, I just tend to make it on the mild side and set out the shaker for those guests who like a little less spice in their lives. Enjoy!!
