Someone once told me that if you're craving a particular food, then your body needs some particular nutrients from it. I'm not sure how the cupcakes and craft beer I crave at times have something I need, but I think it's true to a certain extent. The other day after a rigorous day at work and my Zumba class, I found myself driving home hungry enough to eat a horse. I just couldn't wait to get home to gnosh, so I pulled up to a handy-dandy Subway drive-thru, since its the only fast food I can even attempt to justify, even after a crazy active day. I noticed a sign that said "Avocado is back by popular demand!!" and got excited. I love avocado, and I thought this could make paying 6$ for a bland sandwich a bit more exciting. Well, long story short, what ended up on this sandwich was NOT what I would call avocado. It tasted like salted air, so my hypothesis is they put a single avocado in a huge vat of some cheap chemical slurry and whip enough air into it to tinge it a pale green hue, then coin it "avocado spread" and call it a day. It's no wonder so many people don't like trying new vegetables when the only ones they're exposed to taste like chemical froth.
Blech.
Anyway, with my desire for avocado still unsatisfied, I got a whole bag of them on sale, and what better way to use a ton of avocado than to make a batch of precious guacamole.
Great Guacamole
-2 ripe avocados
-1/2 t. salt
-1 T. lemon or lime juice
- 1 t. garlic, minced
-a pinch of pepper
-1 pinch cayenne pepper
Directions:
Cut avocados in half and remove pits. Mash lightly with a fork, leaving the mixture slightly chunky. Add lemon or lime juice, salt, garlic and pinches of cayenne and pepper and mash a little more.
Nail polish that matches is optional for optimal guacamole outcome. ;)
A lot of traditional guacamole recipes call for cilantro, which I despise. So if you want to put some fresh cilantro in yours for kicks, feel free. An even easier version of t his for a lunch break would be just the avocado, lime juice and salt. Enjoy!
