Ultra-Fluffy Blueberry Flax Pancakes

Brinner is one of the all-time  best meal creations on this here earth. As a breakfast food lover, it's a rare weekend treat when I get to make a time-consuming breakfast and sip  my coffee at a slow pace while savoring each maple syrup drenched morsel. My mornings start very early during the work week, I'm up at 5 am, and what happens then I'm glad I'm alone for, because it's a flurry of coffee swigging- sweater donning -unruly thick hair taming-choking down a protein bar and driving to work whirlwind. Today at work, they served the patients french toast, and I spent the better part of my day dreaming about my craving for breakfast food. The fiance' always gets really excited about pancakes, so I decided to make up some delicious brinner for dinner tonight.

Ultra-Fluffy Blueberry Flax Pancakes

- 3/4 cup buttermilk
-1 cup all-purpose flour
-1/4 cup sugar
-1 t. baking powder
-1 t. baking soda
-1/2 t. salt
-1 egg
-2 T. melted butter
-3 T. ground flax seeds
-1 cup blueberries
-1 t. vanilla

Directions: Combine flour, sugar, baking powder, baking soda, flax  and salt in a mixing bowl until combined. Whisk together egg, vanilla and buttermilk and combine with dry ingredients, whisking until lumps are gone. Heat a griddle or large skillet and coat with cooking spray and spoon 1/4 cupfuls of mixture onto skillet and add blueberries on top. Heat until bubbles appear on surface, then flip and cook until done.




The front one has a bit of a crater in it, which turns out to be a grand vessel for maple syrup. Add some fresh fruit and a few pieces of sausage or bacon, and you've got yourself a brinner delicacy! These are fluffy and glorious,  as a pancake should be. Sure, Bisquick is fast, but it has a load of gross chemicals in it, and takes almost just as long to whip up...

 You can't taste the flax much at all, it just gives a subtle nutty flavor, and some healthy fats! This would taste good with a mimosa too.... It's up to you! ;)
