Crock-pot Beer Chicken

Cooking is something I truly enjoy, and I find great pleasure in sharpening my chef's knife while meats and veggies marinate and simmer around me with some tunes humming in the background. However, it's not always a stress reliever, particularly after a long day. I love adding easy and tasty recipes to my collection, especially when I can use my trusty crock-pot and have a weekend style feast on a Monday night.  I swear I put more miles on that thing than my car. I've made beer- can chicken on the grill before, and that's always tasty, so I scoured Pinterest and the web to see if anyone had ever attempted this in a crock-pot. There are dozens of recipes for it, all about equal in simplicity. So I borrowed from the ingredients that looked like they would be good (And added a few of my own ideas) And the results were as delicious as they were easy!

Crock-pot Beer Chicken

-4 chicken breasts
-1 can of your choice beer
-1 medium yellow onion, diced
-1 t. garlic salt
-1 t. paprika
-1 t. oregano
-1 t. thyme
-1 t. pepper

Directions: 


 It all starts with a beer of your choosing. I used a dark Maple Stout, mainly because it was the only one we had. I think next time I'll try something with a less potent flavor, but this one was pretty good.





Sprinkle the spices onto the chicken breasts, and add the diced onion.



Then drown that bird's sorrows with the beer. Cook on low 4-5 hours, or high for 3-4. Personally I prefer to do all chicken in the crock-pot on low since it tends to hold the moisture better.


Wallah! 

The finished project was a sienna glazed piece of meat with a rich and smoky flavor thanks to the strong qualities of the Stout. The onions had a carmalized flavor to them that was awesome! I served it with a baked potato and some mixed veggies. (And we split the last stout for pairing purposes of course)

This is a great easy recipe, that would go with so many different sides. I can't wait to see what other beers flavors are like with this dish. Enjoy!!
