Parmesan Avocado Spread

One nice thing about freezing cold weather is that it makes 30 degrees feel like summer. I went out this morning to feed the birds and had to come grab my coffee so I could spend 20 minutes outside. I did this in my sweater and jeans, nothing more, and felt like I could have stayed out for hours since it's about 60 degrees warmer than last weekend.

As so many of you out there trying to start the new year out right, I've been going strong in my healthy ways, jogging at least 2 most days and eating a well as possible. One thing I've always believed is that food is great medicine, and when my hands and hair started getting dry from the sub-zero temps I turned to avocados for their healthy fat to give me my shine back. Here's a great quick and healthy spread for a sandwich or a cracker, or whatever  you like to spread on.


Parmesan Avocado Spread

-2 avocados, mashed

-1/4 cup parmesan, ground fine

-2 T. plain yogurt

-1 t. lemon zest

-1/2 t. fresh ground pepper

Directions: Mash avocados in bowl and stir in remaining ingredients. 


Creamy avocado and salty parmesan cheese are a match made in heaven. I love this spread on Triscuit crackers or on a sandwich with provolone cheese.


This does last in the fridge overnight at least somewhat all right, but to store it I'd add some lemon juice to prevent browning. Who doesn't need more ways to eat avocado?  Enjoy!
