Bow-tie Pasta Salad with Veggies and Pepperoni

Have you ever had a date night with yourself? I've polled several friends of mine on this matter, and the majority of them agree with me that it's one of the most relaxing things you can do for yourself. When I was single I used to reserve Sunday nights for "date nights" with myself. It seemed to be the only day I had any time to myself in my twenties, between college, my writing gigs, bustling social life and multiple jobs. I'd drink a glass of wine, sit in a chair with my cat and a candle nearby, and lock myself in my room away from roomates and the world. I felt it gave me time to reflect and truly rest my mind a while. My more extraverted outgoing friends felt a loud party or restaurant were a fabulous way to unwind, while my alone time seemed very important to me. 

I bring this subject up because it's my first evening alone in our new country house, as the boy has a meeting that's running late. I prepared last night and got some of my favorite sushi for the occasion, which disgusts Adam to no end. I plan to watch Netflix and make jewelry, and probably listen to some loud music that I know he wouldn't appreciate. Then I'll be ridiculously happy when he gets home.

Since Christmas  is such a busy time, I've got another easy recipe that's a cinch to whip up in advance for upcoming potlucks and out-of-town guests. It's just different enough to really catch people's attention, and I make it a lot when I have some random ingredients in the fridge.



Bow-tie Pasta Salad with Veggies and Pepperoni

-4 cups cooked bow-tie pasta, chilled
--1 cup chopped broccoli
-1 cup sliced grape tomatoes
-1/2 cup red onion, sliced
-1 package sliced pepperoni with slices cut in half
-1/2 cup Italian dressing
-1/4 cup fresh parsley, diced

Directions: Combine all ingredients in a bowl and toss to combine. Chill 1 hour before serving, lasts 4-5 days. 

*6 servings


Festive colors and simple flavors make this a Holiday season go-to recipe for me.

I've made this with homemade Italian dressing too, and of course it's even better, but in the spirit of the busy holidays I thought I'd share the easy one. I also made it with Tofurkey sausage once ( The vegetarian option) and it tasted exactly like Beggin' Strips dog treats smell , so I'd say if you're going veg on this one skip the meat replacement.  Enjoy!
