Three Cheese Roasted Veggie and Basil Pizza

Saturday nights are the most amazing thing ever. One day of doing whatever the hell you want is in the books, and you're relaxed enough to really enjoy the evening, with the beauty of another sleep in tomorrow.  I myself had a very eventful day of cake-making, sculpting and decorating for my friend's baby's 1rst Birthday, lolly-gagging about window shopping  for house decor with the man, followed by the age old weekend debate of going out for dinner, cooking something elaborate, or getting a pizza.

 My ambitions this fine evening fell somewhere between "Let's make this complicated risotto recipe I found on Pinterest!" to " let's order take-out!". I ended falling somewhere in between, and dreamed up an incredibly super pizza. I supplemented the completely homemade with a pre-made pizza crust and sauce, because I just wasn't feeling quite that ambitious. If you feel so inclined, I'm sure it would be all the more delicious.
 

Three Cheese Roasted Veggie and Basil Pizza

-1 pre-made pizza crust
-1/2 cup red pizza sauce
- 1/4 cup diced black olives
-4 sliced mushrooms
-1/4 cup diced tomatoes
-1 small diced yellow onion
-1 medium red pepper, diced
-1/4 cup fresh basil, chopped
-1 cup provolone, shredded
-1 cup mozzarella, shredded
-1 cup parmesan, shredded

Directions:  Preheat oven to 400 degrees Spread pizza sauce on crust and evenly disburse veggies, cook 10 minutes to roast veggies. Add cheeses and bake another 15 minutes. Sprinkle basil on top before serving.

 I found that roasting the veggies first gave them a  nice   flavor and texture that is usually lost while the heat tries to penetrate the force-field of cheese on top. The trio of   cheeses melted on top really sealed the deal. A sprinkling of fresh basil  gave this amazing pie a fresh little zing to top it off.  Perfect Saturday night movie food, for sure! We sipped a nice Cab with it, and it was the perfect touch. Enjoy!
