Tropical Coconut Popsicles

We are truly in the heart of summer right now. Children have fully relaxed out of the routine of writing and 'rithmetic, the beaches are stamped with thousands of footprints of both man and beast, and the smell of grilling brats and freshly mowed grass floats through the air non-stop.

I love it.

However, the water in Lake Superior is still icy as ever. I think its safe to say you can call yourself a Duluthian if you can submerge your entire body in that lake more than once a year. I did just that this past week when it was 92 degrees, and it relieved me of my sweating death pants for at least an hour.

 It is a bit of a baptism, when you jump into the inviting waters of this lake. I've seen many a Lake Superior virgin scream in agony and defeat and run screaming from her friendly blue waves without daring to just rush in and get it over with. It is definitely a cold accomplishment of the highest merit for a Northerner.

In the spirit of keeping cool, I decided to make a new popsicle flavor, and as a connoisseur of frozen fruit drinks on a stick, this one is the best yet!


Tropical Coconut Popsicles

- 2 cups  coconut water
-1/2 cup pineapple juice
-3 ripe bananas
-1 cup shredded coconut
-2 T. lemon zest

Directions:
In food processor blend bananas until smooth. Add the rest of the ingredients and blend until smooth consistency. Pour into popsicle molds and freeze 3 hours before serving. Makes 6 popsicles.


OMFG is an apt description of these pale lovely treats.
 Fruity and smooth, they make an easy and healthy summer snack.

I think someday I'm going to open a gourmet popsicle stand, because I absolutely love them. And coconut water is so delicious and hydrating on a hot summer day. It's such an easy way to eat something good for you, that tastes like a tropical paradise. Enjoy!
