I've always had a fondness for the odd foods Anytime in a restaurant there is something strange and unfamiliar to try, I'm all over it. Cactus juice martini? Oyster shooter? Deep-fried pickles? ( Which I know to you southerners that's perfectly normal, but at first I thought it sounded like stark-raving mad culinary genius) I do draw the line at strange meats though. Someone held out a spoonful of neon-green wasabi caviar and if I wasn't trying to put on the air of being a sophisticated foodie I would have ran away screaming. Or cow-tongues slow cooked, which showed up at a potluck once. I will never, under any circumstance eat turtle either, having had one as a pet and knowing how stinky and cute they are.
Some of my past favorite strange foods are as follows:
- Pickle, cheese and mayonaise sandwiches. I ate these as a teenage vegetarian, and still eat them today.
-Toast with pickles and peanut butter
-toasted Kale, Bragg's liquid amino acids and nutritional yeast flakes on popcorn ( Trust me, this is nowhere near as terrible as it sounds!)
- raw mushrooms with dijon' mustard
- garlic in all forms, pickled, raw, roasted, etc.
You may notice a theme of pickled items, and no, I'm not and never have been pregnant. When that time comes I"m sure I'll crave totally normal things like toast...
This recipe is an off-shoot of the cranberry tuna I loved at my last ever baking job. I never did get the recipe, so I made up my own over the years and added my own personal touches to make a strangely amazing healthy tuna salad.
Kale and Cranberry Tuna Salad Wraps
-1 can albacore tuna
-2 green onions, chopped
-1/2 cup dried cranberries
-1 pickle spear, diced
- 1 cup whole baby kale and 2 T. diced baby kale
-1 T. parsley
- pinch salt and pepper
-3 T. mayo
-2 whole wheat wraps of your choice
Directions: Combine all ingredients in a bowl and stir to combine. Add to wraps with 1/2 cup greens on each one. Makes 2 servings.
Packed with flavor this wrap is exceptionally healthy for you as well. Omega 3's from the tuna and the mayo, and some powerfully healthy greens. I feel like I could rule the world after eating kale.
So it may sound a little weird at first, but I bet if you try it it'll end up on your lunch rotation for sure! It's also tasty on a sandwich or a salad. Enjoy!
