Irish Coffee with Whipped Irish Cream

Erin go Bragh! Tomorrow is St. Patrick's Day, and having my fair share of Irish blood, I always love paying homage to my ancestors from the Emerald Isle by making an Irish feast. My grandmother's name was Mary- Catherine McCuskie, very Irish indeed. And while I only met her as a 2 year old unfortunately, I heard she was a helluva lady.  

Perhaps my Irish blood is why I flush deep red in the face after 3/4 cup of any sort of alcohol, feel bagpipe music in the depths of my soul,  and love to dance jigs. You never can tell I suppose. For dinner tomorrow I'm making a traditional Corned Beef and cabbage dinner, accompanied by Irish soda bread. I was thinking about what sort of dessert to make, and I thought combining the dessert, cocktail and coffee into one sounded like a great idea. I'd never actually made Irish Coffee, and doubt it's really traditional, but after making up this recipe I think just about any leprechaun on earth would happily sip it. 

Irish Coffee with Whipped Irish Cream

-6 cups brewed coffee of choice ( I used Breakfast Blend)
-2 o.z. of  Irish Cream
-1 o.z. Irish Whiskey (I used Jameson)
-1 t. vanilla
-1 T. powdered sugar
-1/2 cup heavy whipping cream

Directions: In stand mixer or with hand beater, whip heavy cream, 1 o.z. Irish Cream, sugar and vanilla until combined and fluffy. Combine coffee, whiskey, and other 1 o.z. of Irish Cream in coffee cups. Dollop whipped cream on top and drink warm.
* Serves 6



This was absolutely, completely, utterly, in every way amazing. 

Of course I had to make it to try before serving it to my guests. At first I tried whipping the actual whiskey into the heavy cream, and it tasted kinda funky.  Whipping the Irish Cream with the heavy cream and adding just a touch of sweetener with the sugar and vanilla, now that was a good call!
The lovely blob of whipped cream made a delicious foamy layer on top, almost like a latte'. 
I got some pretty cheap Irish Cream, and it tasted just like Bailey's, which is like 30$. I used a brand called O'Reilly's, and it cost 7$. AND it came with a free weird glass that I assume is what people drink cordials out of, which I do not, but nonetheless, it was a nice gesture. So celebrate your inner leprechaun, and have a great St. Patty's!
