It's a sickness, I know. Or as I've lovingly grown into the term coined by a friend, "food eccentric".
My obsession with food is very present when pairing dishes for a meal. I can almost always wrap my mind around the main course. But sides, they are a different beast in an of themselves. Now that I have a fairly decent recipe collection of main dishes, I've started to experiment with some good sides that I can just throw together easily with things often in the pantry. This keeps the grocery store trips down, because I can't seem to go and just buy one thing I need EVER.
Herbed Corn with Bacon
- 3 cups frozen corn, un-thawed
-3 strips cooked bacon
-1 medium yellow onion
-1 T. olive oil
-1 bay leave
-1/4 cup fresh parsley, chopped
-salt and pepper to taste
Directions: In a saute' pan warm olive oil over medium heat simmer onion and bay leave until fragrant. Add chopped bacon for 3 minutes to let flavors absorb. Add corn and stir until heated thoroughly. Remove from heat, stir in parsley and serve warm.

This is such a simple side for just about any meal. I like the versatility, because it can go with so many things, it makes me let go of my desire for the perfect side dish. That's probably because it has bacon in it, and it's a universally loved food by all. Except of course vegans and vegetarians. And probably pigs too I suppose... I serve it with everything from ham to brats, and it's always the perfect compliment, and a cinch to whip up in 5 minutes. Enjoy!
