Blueberry Avocado Super-food Smoothie

 


 I have always liked weird things. Since I was really young, I remember always seeking out whatever seemed the most odd, then I'd run with it. Neon pink spandex shorts under skirts in middle school? Heck yeah, and there are many pictures to remind of me of it...Collecting Giraffe's? Sure, they're such a beautifully strange  animal, what with they're 6 foot spotted necks and all... Pets with clever food names? My fluffy friend Tofu can attest to that, and she sports her soy product name with pride.

 I have always loved to try weird food too. It started off as a survival skill in college, when I had to figure out a way to make 20 dollars feed me for an entire week, and when your desperate and equally broke room-mates tip toe around the kitchen hungry in the middle of the night, stuff disappears...

Fact: Almost no one will steal your vegetarian hotdogs or your seasame and seaweed rice cakes. They will shake there heads at you in pity and dismay when you spritz your pocorn with Bragg's Liquid Amino Acids and sprinkle it with nutritional yeast flakes, and keep their Oreos in their bedroom.

   But that's OK, because it's really, actually tasty to eat weird healthy foods. (NOT vegetarian hotdogs, hotdogs in any form are just wrong......) And it's my New Year's Resolution to start getting back in the swing of being really healthy. Long hours at school and work this past year have wreaked havoc on my healthy diet, and I'm trying to fit in ways to get back into the healthy mind frame I know is so important.

I really love smoothies because they're a great snack or meal replacement, and you can fit a whole lot of your daily servings of fruit or vegetables in them. I made this one by cramming  the super-est of super foods into it.


Blueberry Avocado Super-food Smoothie
- 1/2 cup blueberries
-1/2 banana
-1/2 avocado
-1/4 cup pomegranate juice
1/2 cup plain kefir 
-1 T.  Agave Nectar(or honey for non-vegans)
Directions: Combine all ingredients in a blender and pulse to combine.



 I garnished them with a quarter of a pomegranate. The avocado and banana give it an amazingly silky texture, and the honey and pomegranate juice give it a hint of sweetness.




 This makes for a very happy hour after work!

I often make this smoothie the night before and stick them in the fridge for an awesome vitamin packed breakfast. You can add protein powder to make it more of a meal too.
