Coconut Dark Chocolate Haystacks


This past weekend I found myself with this surprisingly delightful thing  I've heard referred too in passing  as "Free time". This was time unadulterated by school obligations, or the day job, and it was true bliss. 
 And, as most super exciting people in their late twenties do when they're bored, I decided to spend some of this precious free time to clean out my borderlinescarynasty pantry. 
And what-ho, found some inspiration for some treat making at the same time.
With half full bags of so many a foodstuff oddity, I found some coconut, bran-flakes, butterscotch and chocolate chips of many shapes and sizes, and many other things I wouldn't dare admit too, and decided to make a rendition of a very popular treat I made at an old cafe job on a daily basis, the chocolate haystack.
Dark Chocolate Coconut Haystacks
- 1 cup shredded or flaked coconut
-3 cups dark chocolate
 - 1 cup bran or cornflakes
   -1/3 cup chopped pecans
-1/2 cup butterscotch or white chocolate chips
1/2 cup almond butter
-1 T. Canola Oil
Directions:  In a medium saucepan, combine canola oil, chocolate chips, white or butterscotch chips, and  almond butter and stir to melt over low heat, stirring constantly. Chop cornflakes until small and combine with coconut and chopped pecans in medium bowl. Add melted chocolate concoction to dry ingredients and stir until combined. Using a scoop or spoon, place 1/4 inch scoops of mixture onto wax paper lined cookie sheet and place in fridge 2 hours.
You know the Dr. recommends you have a serving of chocolate every day, right? This makes it easy.
And these are a great X-mas treat to make as a different addition to your cookie trays. I make them every year, and they're always a huge hit.
