Curried Chicken Salad Wraps ( Leftovers shemeftovers)



Time's a bit tight these days for me and the ole boyfriend,( as it is for everyone, right?) Between work, school and the endless odds and ends and details in a day, time to cook and bake for fun goes by the wayside for a bit and we lean towards easier and quicker fare. 

We had made a roasted whole chicken for dinner the other night, and after carefully doling out our deck of cards sized portions (haha, yeah right) we still have a lot of bird with a limited shelf-life to consume. I'm not a huge meat eater, and I'll honestly say chicken is one of my least favorite foods. I know a lot of people really love it, so I thought to share a suggestion for leftover roasted chicken. One can only eat so many plain chicken sammies without getting a yearning for something a little more lively on the flavor side.

Curried Chicken Salad Wraps
- 2 cups shredded cooked roasted chicken. Shred by scraping dowward on meat with a fork until it flakes off into bite sized chunks
-1/3 cup died cranberries
-1 medium apple, diced
-1/2 cup diced celery
-1/3 cup diced red onion
- 2 T. parsley ( fresh preferred, dry is ok)
-2 T. mayo
-1/3 cup sour cream
-1 T. dry yellow curry powder
-2 T. honey
- 2 cups spinach
- whole wheat wraps
Directions:
In a medium bowl, combine the mayo, honey, sour cream, curry, parsley, salt and pepper. Mix until smooth and combined. Add chicken, apples, celery, onions and toss to coat. Lay wraps flat and spoon 1/2 cup servings onto them. Put a handful of spinach on each wrap and fold up like a burrito.

*This can be made a gluten-free wrap by using a gluten-free tortilla, such as one made from corn or teff flour! 



It's nothing like the chicken salad my grandma used to make. I love curry, and any chance I get to put in on something I'm happy. This wrap is dang good, and healthy too, with at least 2 servings of fruit and veggies. I use a whole wheat wrap, which takes some trial and error to get a good one, because some brands  taste like paper towel. But Azteca makes a good one, and it just takes trying a few brands  to see what you like.

Leftovers can be a challenge to make something tasty that's going to make you want to eat the same thing a few nights in a row in a new incantation. But it's a score when you come up with something tasty that you want to make again and again  because you like it. 
Without experimentation in the fridge, we'd all be eating chicken and mayo sandwiches, just wishing it was gone so we don't have to feel bad about chucking food when there are starving kids in Africa....
