Grilled Lemon Chicken with White Beans, Kale and Red Peppers

Last night my good friend and I went to see Dolly Parton, and my oh my what a fun show it was. I heard plenty of sniggers when  I told some people I was going to see her, but snigger away haters! That woman is a truly beautiful and awesome person, and when you looked across the crowd all you saw was gigantic smiles. She played at least 5 instruments, including the banjo on her hip while she rocked out on a fiddle, each one be-dazzled with sequins as radiant as her personality. Needless to say, it was a blast and a half. I'm on a summer vacation right now, trying to reclaim the feeling of  carefree summer days I had as a child for at least a week. It's been an adventuresome and amazing one! But after a week of eating out most meals, I was ready to plan some home cooked fare. So last night in our freezing hotel room courtesy of the worlds most powerful AC unit, with Jolene still ringing in my ears I laid awake thinking of what delights I could muster up. It's an extremely hot week, so the oven was out of the question, so of course the grill beckoned! There's also a mishmash of fresh goodies coming out of our garden, so I took full advantage of using what was ripe this week.

Grilled Lemon Chicken with White Beans, Kale and Red Peppers

-1 lb chicken breast seasoned with salt and pepper, grilled 
-1 whole lemon
-1.5 cups white beans
- 1 head kale, chopped
- 1 red pepper
-1 medium onion
- - clove garlic
- olive oil
- salt and pepper to taste

Directions:
 Saute' onion and red pepper in olive oil in sauce pan over medium heat. Add kale,garlic, beans, pepper and saute' 5 more minutes until garlic is fragrant. Chop grilled chicken and toss  it all in a bowl until combined. Serve warm, and squeeze lemon over dish before serving. Makes 4 sides or 2 main dishes.


 This is a refreshing and healthy summer meal. I'm always looking for more ways to use the grill. Now I'm off to jump in the lake, it's crazy hot out here in Wisconsin for the evening hours. Enjoy!
