Buffalo Chicken Pinwheels

Well I've been out of commission for the better part of this month with a terrible case of influenza. The month of January is a bit of a blur, so I wasn't blogging much, just trying to go through the motions and get myself healthy again. But I'm sure envisioning me semi-conscious and cough-y on my couch isn't the most appetizing mental picture, so hows about  I change the subject... Tomorrow is the Super Bowl, and being  mostly un-interested in watching sports personally  (and the fact that the Packers aren't in the Super Bowl) I can respect the desire so many people have to gather around appetizers and beer, and hop around all excited like and watch the commercials more than the game. I made these pinwheels for a potluck party I went to last night, and  I thought they turned out super good. They'd be a great addition to a Super Bowl snack fest!

Buffalo Chicken Pinwheels

-1 lb. cooked, shredded chicken ( I used a rotisserie)
-1/2 cup Franks' Red Hot wing sauce
-1/2 cup finely chopped celery
-1/2 cup finely diced green onions
-8 oz. softened cream cheese
- 1 1/2 cup monterey jack cheese
-1/2 cup blue cheese
- 5 tortillas
Directions: Shred the chicken and set aside in bowl. Add the cheeses and hot sauce to mixing bowl and beat on low until smooth. Mix in green onions, celery and chicken until combined. Spread on tortillas in thin layer and roll up. Place in fridge covered at least two hours, then slice into sizes of your choice.


These tasty appetizers give the perfect amount of "Minnesota" heat, but you can add a little more hot sauce if you'd like them to be a little more zippy. They're also good with a little blue cheese dipping sauce.
I always agonize over what to bring for a potluck, so I'm happy to have this recipe in my arsenal. Enjoy!
