Artichoke, Spinach and Roasted Garlic Flat Bread Pizza

In the midst of making myself an early morning egg wrap, I noticed that my usual whole wheat tortilla was giving me a bit of attitude. It was stiff, it cricked cracked, and split, and generally aggravated me right proper at 5:30 a.m. whilst I chugged my standard 2.3 cups of coffee before work. Instead of arguing with my breakfast, I looked at the package, and I had somehow bought flat bread instead of tortillas. Always a food opportunist, I made quite a few mini pizzas out of that there flat bread, and I found a new favorite food for quick and impressively tasty  meals.

Artichoke, Spinach and Roasted Garlic Flat Bread Pizza
- 1  flat bread for each pizza
-1 clove of minced garlic
-1/2 cup chopped spinach
-2 chopped black olives 
-1 T. diced onion
-3 sliced marinated artichoke hearts
- 2 T. pizza or tomato sauce 
-1/3 cup shredded mozzarella and provolone cheese mix
-1/4 t. salt
-1 t. basil
Directions: Preheat oven to 325 degrees. Spread tomato sauce over crust, and layer toppings on. bake 10 minutes, until garlic roasted and cheese melted. Serve warm.


So good, and just the right size for one person. I made two of this one and saved one for lunch the next day.


The fiance' made his with cheddar and pepperoni, it looked to die for too! A great idea if you have varying preferences in pizza topppings.
I am now obsessed with flat bread pizzas, and am really happy I bought the flat bread on accident. That's what you call a "happy accident", right? Enjoy!
