Seasoned Kale Chips

I've noticed that since I no longer work in a health food store on weekends I have got so much less random organic food in my fridge. We had this magical box called " Produce pick-up" where you could take 5 items a day, full of bruised or otherwise misplaced fruits and veggies. Somedays you would pull up a perfect avocado, a bushel of lovely beets, a bunch of bananas and a huge pile of parsley. Other days you would put your hand through a soggy  rotten squash. That's just how it went.

 I miss that free produce, but not working 6 days a week, that' s for sure! I also started to feel like I wasn't eating as healthy in the past few months without an endless stream of free goodies, and thought it was time to make more of an effort to stock the fridge with the healthy treats I'd grown so accustomed to. 

Also, since not working in said health food store, I no longer have constant access to my (and my boyfriend's) favorite snack, Seaweed strips. Which are, exactly as they sound, strips of seasoned seaweed, and they are AMAZING. Possibly sprinkled with crack, they are that good. But I didn't feel like sitting in traffic just for those, so I made a close second, Kale Chips. They're a super cheap alternative, and still pretty healthy after baked.
 
 
Seasoned Kale Chips
 
 
-1 bunch kale ( I used curly) chopped into 2 inch strips
 
-1/2 T. olive oil
 
-1/4 t. salt
 
-1/4 t. garlic powder
 
-1 t. nutritional yeast flakes
 
Directions: preheat oven to 350 degrees. Combine kale, oil, salt and garlic powder, and bake 20-25 minutes, until crunchy and dry. Remove, dust with nutritional yeast and cool.
 
 
 
 
 
Crikey! These are awesome. Crunchy, nutty, and green as all get out.
 
I have to stop myself from eating them all in one sitting, because the belly doesn't like such things a great deal. If you've never had nutritional yeast, I know it sounds disgusting. But it's awesome, chock full of B vitamins, and gives foods a nutty or cheesy taste without added fat. You can also grind them up and put the powder on popcorn or on a salad. Tres yum!
