Chocolate Fudge Pops

Well, as you may have assumed,  my lack of blog posts means my computer is still on the fritz... I have sat down 5 times in the last week to try and write one, and the monstrosity that I'm using takes about five hours to load up, so by that point I'm too annoyed to do write about delicious popcicles. Summer is almost over!! How does it always seem to slip away so fast? I had so many plans, only half of which got accomplished this far, and there's only about a month left. One summer my friends and I vowed to have 100 fires on the beach. Quite a lofty goal, since there's only about 90 or so nights in summer, some of which are ice cold or raining.We etched the number in the sand and took pictures of it, and I think we got up to about 37. I would like to try that with popsicles next summer, 100 new popsicles, a different one for every night of the week. It could surely be done, there's on doubt in my mind about that. In the spirit of lofty popsicle dreams, here's my recipe for chocolate fudge pops.

Chocolate Fudge Pops
-3/4 cup sugar
-2 T. Cornstarch
- 2 1/3 cups milk
-4 egg yolks
- 1 T. butter
-1 1/2 T vanilla
Directions: In a meduim saucepan stir sugar, cocoa powder and cornstarch together, then stir in milk. Cook and stir until bubbly, then cook and stir 2 minutes more. Remove from heat and stir in 1 cup of milk mixture to 4 egg yolks. Add egg mixture to milk mixture in saucepan and bring to a gentle boil. Cook and stir 2 more minutes. Remove from heat and stir in 1 T. butter and vanilla. Pour into bowl and cover top directly with saran wrap and cool in fridge 30 minutes before pouring into popsicle molds and freezing at least 3 hours until set.





These make Bill Cosby's artificial flavor infused  Pudding Pops taste like an old shoe.
Fresh, creamy cocoa with an awesome chewy fudge taste.


 They do melt fast, especially on a hot day. But trust me, eating these fudge pops slowly won't be an issue.
