Blueberry Almond Super Salad

The first time I ever juiced, it was a gargantuan pile of dandelion greens I'd scored from my lovely farmer friend. I combined them with lemon juice and ginger root, liquified and consumed them. They tasted like what I can only imagine emptying the mulch bag on your lawn mower and drinking it must taste like, because they were god awful. I choked it down for the sake of experiment though, and afterwards I felt absolutely incredible. Like, I could pick up your car and throw it for you, if you  had the desire. Juicing took some getting used too, and a bit of recipe hunting, but I figure sometimes you don't want to juice something to get the amazing effects of the foods you're eating. And if you have to plug your nose so you don't gag to drink something, you probably won't drink it again.
         The truth of the matter is that we are busy, bustling creatures who truly strive to eat well most of the time, but it's kind of a struggle once and a while. That's why I like to keep a huge, ever expanding collection of fast salad recipes for the summer. It's too hot to turn on the oven a lot of days, and our gardens overflow-eth with fresh fruits and veggies. Eating a variety of fresh foods is probably the biggest favor you can do for your health, and it keeps dinner exciting to boot. 


Blueberry Almond Super Salad ( two servings)

-2 cups spring mix greens
- 1 cup blueberries
-1/2 cup whole or sliced almonds
-1 T. red onion 
- 1/2 cup hemp seeds
- 1 T. flax oil
-1 t. olive oil
-2 t. red wine vinegar
Directions: Divide ingredients equally between two bowls, drizzle flax oil, olive oil and red wine vinegar over the top before serving.




Every  iota if this salad is good for you, and it tastes  incredibly fresh and healthy. The perfect sidekick for some grilled meat, fish or veggies on any given summer night.



Hemp seeds are  a delicious healthy little seed off the hemp plant.  They boast an abundance of Omega 3's and have a  subtle  nutty flavor. These curious little seeds can be found at any health-food store and are an easy way  to add crunch and healthy flair to any dish! This is a ridiculously easy salad to whip up for a last minute dinner party.
