Spinach and Cheddar Muffins

All I heard from the kitchen as my boyfriend walked in was "OOOHHH, you made muffins! Wait a minute, what's green in here? What the---"  Mind you, these are the words of a man with a golden metabolism who has been spoiled by a six year relationship full of freshly baked treats at least twice a week... When I said they were spinach and cheddar muffins, you'd think I just denied him a new puppy. "Vegetable muffins?" he proclaimed ; "That's gross!"
On the contrary, they are very delicious. I should know, as I've been eating two a day for the last few days since he won't touch a single one... Savory scones and muffins are some of my favorite things to bake, because the possibilities are endless with how to serve them, and what concoction to make up!

Spinach and Cheddar Muffins

-3 1/2 cups flour ( I use Bob's Red Mill Whole Wheat Pastry Flour)
-2 eggs
-3/4 cup canola oil
-2 1/2 cups buttermilk
-1 1/2 cups fresh spinach, chopped fine
-1 cup sharp cheddar cheese, shredded
-1 1/2 T. Baking powder
-1 t. salt
-1 t. garlic powder
-1 T. basil
-1 T. oregano
-1 T. Rosemary

Directions: Preheat oven to 375 degrees. Line 12 muffin cups with papers and spray with non-stick spray. In a medium bowl, combine flour, herbs, baking powder and salt, whisk to combine, making a well in the finished dry mixture. In another bowl, combine eggs, buttermilk and canola oil and whisk to combine. Add wet to dry mixture and fold to combine. Fold in spinach and cheddar last, and bake 20-25 minutes, until toothpick inserted inside comes out clean.





See? They're not scary at all! Everything can't be sugar coated, sometimes it has to be cheese coated....


They make for a great breakfast, alongside a soup for dipping, or with quiche.


I used sharp cheddar because I thought its flavor  would come out the most in the muffin, but I'd venture any cheddar would be good as well.


I'll probably have to bring some of these savory treats to work tomorrow to share with my co-workers. They're not scared of a little vegetable muffin! Are you???
